Sbrinz AOP is produced in the cantons of Lucerne, Schwyz, Obwalden and Nidwalden, Zug, Aargau and Bern. Its existence is documented by 16th century sources, and its name derives from the town of Brienz, in central Switzerland.

Sbrinz AOP is produced daily using traditional techniques in cheese dairies on the plains and mountain pastures. What makes it so special is the fact that it takes such a long time to mature. It takes 18 months to mature before it is ready for consumption and must be aged 24 months to develop its rich aromas! Presently, it is loved by fans of appetizers, who enjoy eating it as chunks or as wafer-thin curls. Grated Sbrinz is also perfect for making delicious gratin dishes.
